Introduction

A mish-mash of all my late summer veggies from my CSA for the perfect salsa. NOTE: definately wear gloves when cutting jalapenos. ;) A mish-mash of all my late summer veggies from my CSA for the perfect salsa. NOTE: definately wear gloves when cutting jalapenos. ;)
Number of Servings: 16

Ingredients

    A bunch of tomatos (can vary types and colors; tomatillos taste great)
    1 onion, chopped
    1-2 bell peppers, chopped
    1/2 - 1 jalapeno, minced
    1 other hot pepper (milder), minced
    3-4 ears of corn, cooked and kernels removed
    2-3 cloves garlic, minced
    1/4 cup-ish minced cilantro
    1 tsp salt (can decrease if wanted)
    1/2-1 tsp pepper
    1/2 tsp cumin
    1/3 cup vinegar

Directions

Mix all ingredients and chill. Serve with chips, or over black beans.

Serving Size: Makes approx 16 1/2 cup servings
