Introduction
I adapted these from another recipe by doubling the oats and halving the nuts. They were WAY too sticky, gooey, sweet before and are perfect now. Ingredients
-
4 cups rolled oats
1 cup rolled oats, finely ground
1/2 cup chopped pecans
1/2 cup semi-sweet mini chocolate chips
1/2 cup dried cherries or cranberries
1 can (14 oz) fat free sweetened condensed milk
Directions
Chop pecans, and chop cherries/cranberries into smaller pieces (distributes the flavor better). I grind the 1 cup of rolled oats in my mini-chop food processor, but you can substitute 1 cup of wheat germ instead, although it won't be gluten free & I never have wheat germ on hand, so I stuck with oats.
Mix all ingredients well in a medium bowl. Press into a prepared (sprayed or lined w/foil & sprayed) 9x13 pan, patting down firm. Bake in a 325 degree oven for 30 minutes or until golded brown.
Cool well and cut with a long sharp knife into 24 bars (approx. 1 x 4 inch bars. I cut in 3rds along the long side and then in eighths along the short side--half, then quarters, then eighths). Can be stored in an airtights container up to 1 week or frozen.
Serving Size: Makes 24 bars
