Number of Servings: 8

Ingredients

    10-12 oz. silken or soft tofu

    2 tbsp butter or margarine

    1.5 cups of firmly packed grated or shredded cheddar cheese

    1 pkg macaroni noodles


Directions

Cook macaroni noodles as usual

Blend tofu until smooth in food processor or blender
Mix blended tofu, cheddar and margarine in sauce pan; heat until cheese is melted

Add sauce mixture to cooked noodles

Makes 6-8 servings

    Incredible!
    I used grated parmesan for part of the cheese for deeper cheese taste, plus white pepper and a tiny bit of salt. What a great nutritious cheese sauce! - 1/11/11
