Introduction

A great Summer feast of a stir fry with fresh greens, mushrooms, shrimp, and black beans. A great Summer feast of a stir fry with fresh greens, mushrooms, shrimp, and black beans.
Number of Servings: 5

Ingredients

    2 TBS Coconut oil
    1 clove garlic
    1 large slice red onion, chopped
    4 white mushrooms
    1.5 cups of raw shrimp
    1.5 cups fresh cabbage, shredded or chopped
    1 cup kale, chopped
    3/4 cup of black beans, drained and rinsed
    1 TBS Soy sauce
    2 TBS Apple Cider Vinegar
    1/4 cup water

Directions

1. Saute galic and onion in coconut oil until beggining to carmelize
2. Add mushrooms, saute about 3 mintues
3. Add Shrimp, cook until not opaque
4. Add cabbage, Kale, and black beans
5. Stir well
6. Add water, soy sauce and vinegar, stir well
7. Cover and let simmer with occasional stirring until cabbage is slightly softened (about 7 minutes)
8. Serve as is or over rice or noddles
