Ingredients

1 tsp dried parsley
1 tsp lemon zest, grated
1 minced clove of garlic
1 tsp extra virgin olive oil
1/2 tsp Salt Sense
1/2 Tsp ground pepper
1/2 lb lean pork tenderloin
1 medium yam, peeled and cut crosswise into 8 slices
1 Tbsp water
1 medium apple, cut into 6 wedges
1/2 tsp Splenda brown sugar blend
1/8 tsp ground cinnamon
Directions
1. Preheat oven to 450 degrees. Spray 9x13 baking dish with cooking spray.
2. Mix parsley, lemon zest, garlic, oil, 1/4 tsp salt and pepper to a paste in a small bowl. Place pork in baking dish; spread parsley mixture evenly over top of pork and let stand 5 to 10 minutes.
3. Meanwhile, place yam slices and water in a small microwavable dish. Cover and nuke on high until parcooked, about 3 minutes. Drain.
4. Place yam slices and apple wedges around the pork. Lightly spray with nonstick cooking spray; then sprinkle with sugar, cinnamon and remaining salt. Roast until instant read thermometer inserted in center of pork registers 160 degrees for medium and the yam and apple slices are tender, about 30 minutes. Cover pork lightly with foil and let stand 5 minutes.
5. Cut pork crosswise in 6-8 slices and serve with yam and apple.
