Ingredients

350 grams Beef (top sirloin)
2 tsp Soy Sauce
1 tsp Brown Sugar (unpacked)
2 tbsp Safflower Oil, 2 tbsp
1 tsp Pepper, black, 1 tsp
1 dash Salt
1 Mango, peeled and sliced into strips
2 Sweet peppers (bell), or approx 2 cup, chopped
3 Scallions, just the white and pale green parts (save the tops for garnish)
2 cloves Garlic
2" cube of Ginger Root
1 tbsp Chicken Broth
1.5 tbsp Soy sauce (tamari)
1 tbsp Corn Starch
Directions
Combine first 6 ingredients and let sit for 15-20 minutes.
While they are sitting, mince ginger, garlic and scallions. Heat another dash of safflower oil in a wok or pan and once it's hot, add the scallions, garlic, and ginger.
Once they are fragrant (about 60 sec), add the beef and press down into one layer.
Wait until the beef is nicely browned on one side, then turn and add the mango and sweet peppers on top.
Once the beef is browned again, add the soy sauce, chicken broth, and corn starch, and saute until thickened.
Serving Size: makes 3 servings
