Ingredients

    sausage, potatoes, peppers, onions, mushrooms, & garlic sauteed with spinach thrown in at the end

Directions

cut up and bake the potatoes for about 20-30 minutes. While you wait saute the onions and peppers and mushrooms in about a tbsp of olive oil until tender, for the last minute throw the garlic in. Remove veggies from pan and toss in the potatoes and sausage (note make sure the sausage was cooked and sliced BEFORE this point) and let the potatoes get some crunchy bits on them. Put the veggies back in the pan and remove from heat, toss in the spinach (i also used kale..just as delicious) and serve. Recipe courtesy of Joythebaker.com
