Introduction

Low-fat but sooo good!! Low-fat but sooo good!!
Number of Servings: 24

Ingredients

    Muffins
    2 c flour
    1 c quick oats
    1 tsp baking powder
    1 tsp baking soda
    1/2 c granulated sugar
    5 medium mashed bananas (about 1 1/3 c)
    1 c unsweetened applesauce
    1 c plain nonfat yogurt
    4 egg whites
    1 tsp vanilla extract

    Crunch topping
    1/2 cup of unpacked brown sugar
    1/2 cup of chopped walnuts

Directions

Mix dry ingredients in a bowl and set aside. Whisk together bananas, applesauce, eggs, yogurt, and vanilla extract. Gradually mix in flour mixture. Place batter in greased (use cooking spray) muffin tins. Mix together the brown sugar and walnuts for the crumb topping. Sprinkle the topping on each muffin. Bake at 350 for approximately 27-30 minutes. Insert a toothpick and make sure it comes out clean. Cool on wire rack.
