This is so fast and so easy to make and good for you to! You get the crunch of fried foods, with out all the fat! Make a big batch for a party!! Ingredients

    1 can whole artichoke hearts,
    1 Tbsp. Cheddar Cheese or freshly grated Parmesan cheese (both are great)
    1/ 4 cup Panko breadcrumbs (or seasoned Italian breadcrumbs)
    1/4 tsp salt
    1/4 tsp pepper
    1 egg, beaten or egg sub.
    1/4cup Spicy Chipotle Aiolo Sauce

    3 tablespoons fat free mayonnaise
    3 tablespoons of non fat plain Greek Yogurt
    2 teaspoons chopped chipotle chiles in adobo
    1 teaspoon minced garlic
    1/2 teaspoon cumin
    4 teaspoons fresh lime juice
    sea salt & freshly ground black pepper, to taste

    Directions

    Put all ingredients in a blender and blend until smooth.

    Transfer to a bowl or squeeze bottle, and refrigerate until needed.

Directions

Preheat oven to 375 degrees.

Drain and rinse the artichoke hearts then pat dry thoroughly with paper towels. Be sure to really rinse them or there to salty.

In a small bowl, combine the breadcrumbs, cheese, salt and pepper. In another smaller bowl, crack the egg and beat lightly with a fork.

Line a baking sheet with tin foil or parchment paper and give a quick spray with non-stick cooking spray.

Lightly drench each heart in the egg then cover with the breadcrumbs. Bake for 25-30 minutes, flipping halfway through. While hearts are baking, prepare the sauce. Enjoy!
