Ingredients

1 (6oz) package semisweet chocolate morsels
1/2 cup + 1.5 Tbsp shortening
3/4 cup sugar
1 egg
1/4 cup light corn syrup
1 tsp peppermint extract
1 tsp vanilla extract
2 cups all-purpose flour
1 tsp baking soda
1/4 tsp salt
1/4 cup crushed peppermint candy (I use 5-6 medium candy canes)
additional sugar for rolling
Directions
Melt chocolate morsels in top of a double boiler over simmering water.
Cream shortening in a large mixing bowl; gradually add 3/4 cup sugar, beating until light and fluffy. Add chocolate and beat. Add egg, syrup and extract. Beat well.
Combine flour, soda, and salt in large bowl; stir in chocolate mixture and peppermint candy.
Shape dough into 1-inch balls, and roll in additional sugar. Place 2 inches apart on ungreased cookie sheets.
Bake at 350F for 11 to 15 minutes. Cool 5 minutes before movine to wire racks.
Makes about 70 cookies. I use the small Pampered Chef scoop to measure them out.
Note: I like these cookies a little softer so I take them out of the oven right at 11 minutes so they don't get quite so hard as they cool.
