Ingredients

    1 can Progresso Lentil Soup
    1 15 oz can diced tomatoes
    1 tsp. minced garlic
    1 tsp. oregano
    1 tsp. basil
    1/2 cup brown rice, dry

Directions

In medium saucepan, prepare rice as directed on package (omit oil or butter if the package calls for it).

In small sauce pan, combine remaining ingredients and simmer while rice cooks. When rice is finished, pour soup mixture over rice and stir thoroughly. Allow to sit for 5 minutes, then serve. Sprinkle each serving with grated parmesan cheese, if desired (not included in nutritional counts).

Serves 2.
