Fast and easy with a food processor. Raisins can be used instead of dried cranberries. Fat and calorie contents can be easily lowered by using a different mayonnaise. Ingredients

    Carrots, raw, 1 lb
    Pineapple, canned, crushed, 3.5 cups (1 can)
    Cranberries, dried, sweetened (craisins), 3/4 cup
    Helllmann’s Canola Mayonnaise, 3/4 cup

Directions

Wash and shred the carrots. Stir all ingredients together, cover, and place in refrigerator until well cooled. Serve.
