Ingredients

    6 tsp. unsalted butter
    1.5 cup onions, chopped
    7 cups frozen sweet peas
    3 cups chicken stock/broth

Directions

In a large, heavy saucepan, melt butter and sautee onions on low heat for about 15 minutes till soft. Add peas and stock/broth. Simmer about 20 minutes. Allow to cool slightly. Transfer soup to blender and process till smooth. Strain to remove pea skins. Return to saucepan, add salt and pepper to taste.
