Ingredients

    2 T EVOO (olive oil)
    1/2 to 1 large white onion
    1 1/3 C uncooked green lentils
    1 small leek sliced fine
    3/4 C uncooked long-grain white rice (Basmati Rice)
    salt & pepper to taste
    1/4 C plain yogurt or sour cream (optional and not counted in nutritional calculation)

Directions

Heat the olive oil in a large heavy bottomed pot or saucepan over medium heat. Stir in the leek and onion and cook about 10 minutes until browned. Place lentils & rice in pot with onions, add enough water to cover. Salt & pepper to taste. Bring to a boil, stirring occasionally, cover, reduce heat and simmer 15 minutes. Add enough water to cover again. Simmer for 15-20 more minutes, until rice & lentils are tender. Top with yogurt or sour cream.
Optional: At the beginning, using one large onion, slice the onion into rings, after browning remove half the onions and use them to garnish the finished dish.
