Ingredients

    roasting chicken
    water to cover
    18 large carrots, sliced thin
    1 tbsp butter
    1 large onion, chopped fine
    several cloves of garlic, 3-5, chopped fine
    1 tbsp marjoram
    1 tsp oregano
    4 cups tri color rotini noodles

Directions

Rinse chicken and place in large, deep dutch oven. Cover with water by 3 -4 inches. Boil on medium - low heat for 75 - 90 minutes til chicken is done. Meanwhile, peel and slice carrots, and chop onion and garlic. Remove chicken and leave broth boiling on low. Skim off any foam or fat remaining in broth. Add carrots to broth. Saute onion and garlic in 1 tbsp butter. When translucent, add to broth. Add seasonings and simmer. Add noodles when carrots have had 10 minutes or so to cook. Stir every so often, so noodles won't stick to pan. Pull all meat from cooled chicken and set aside. When carrots are tender, and noodles are done, place chicken in the pot. Stir and serve.
