Ingredients

    4 Large Green Tomatoes
    1 tsp Salt
    Black Pepper to taste

    2 c Coarse Ground Yellow Cornmeal
    4 T Oil for frying

Directions

1. Slice green tomatoes into 1/2 inch slices and sprinkle with salt.

2. Let stand for 10-15 minutes. Blot dry with paper towels and sprinkle with pepper.

3. Pour oil into a large skillet and heat it on medium high high until the oil is very hot.

4. Pour cornmeal into a pie pan.

5. Coat both sides of the tomato slices with cornmeal.

6. Carefully place the tomato slices in the hot oil. Fry until golden brown on both sides.

7. Serve immediately.
