Introduction

Ingredients

    1/2 lb Spaghetti
    2 Tbls Butter
    1 C Sliced Mushrooms
    1 C grape tomatoes, quartered
    2 Cloves garlic, minced
    1 lb Raw Shrimp, peeled and deveined
    1/4 C white Wine
    2 Tbls lemon juice
    2 C fresh Spinach, torn
    1/2 C Half and Half Cream
    1/4 C shredded Parmesan Cheese
    Salt and pepper to taste

Directions

1. Bring large pot of water to a boil over high heat. Follow package direction to cook and drain pasta.
2. Melt the butter in a large skillet over medium heat. Cook and stir the onions and mushrooms uncovered, stirring occasionally. Stir in tomatoes and garlic, season with salt and pepper. Add shrimp and cook, stirring occasionally until shrimp and just turning pink.
3. Stir in white wine and lemon juice, reduce heat and simmer until shrimp are opaque. Stir in spinach until wilted, add half and half and Parmesan cheese. Simmer until heated through and sauce is slightly thickened. Serve over cooked spaghetti.
