Number of Servings: 6

Ingredients

    1 small onion, chopped finely
    .5 tsp canola or olive oil (spray is ideal)
    3 cloves garlic, minced
    1 tsp tarragon, dried
    dash of black pepper
    3 potatoes, cut into 1/2 cubes
    4 cups vegetable broth (Rapunzel cubes are the best!)
    2 cups water
    1 cup celery, chopped
    1 cup carrots, chopped
    1 cup broccoli, chopped finely

Directions

Cook onions for 5-7 minutes on medium with a spritz of canola or olive oil. Add garlic, tarragon and pepper and cook for about another minute.
Add broth, water and potato--bring to a boil. Once the soup begins to boil, reduce heat so that the soup simmers. Let it simmer for 15 minutes. Add other veggies and simmer for 15 more minutes. Blend part of the soup to thicken the broth to your preferred consistency. Salt and pepper to taste!
