Introduction
This is a SUPER substitute for instant (or not) mashed potatoes. Minced garlic makes for zippy additional option. So good, you can eat a whole cup and feel great about it! Ingredients

1 Head medium (5-6" dia) Cauliflower, raw,
1/2 Cup Milk, nonfat, 1/2 C (or amount to reach desired texture)
1/2 Cup Onion, raw, grated
2 Tbsp Parsley, dried
3 Tbsp Butter, salted, (melted)
1 tsp Garlic, minced (optional)
Directions
1) Break cauliflower head into smaller bunches and steam until soft OR microwave about 15 minutes in deep dish with about 3/4 cup water in bottom of dish
2) Grate 1 small onion to about 1/2 cup
3) Stir parsely and garlic into grated onion and pour mixture into small sautee pan with butter and slowly sautee while cauliflower is cooking
4) When cauliflower is soft enough, hand-mash (or place in blender) with butter and onion/garlic/parsley mix
5) Add milk gradually to reach desired consistency
6) Serve immediately
