Introduction

Ingredients

    2 small cans Tuna in Water - Drained
    1/4 c chopped Green Olives
    2 Tbsp Olive Oil Mayo
    2 Tbsp Pesto Sauce
    Juice from 1 Whole Lemon - Squeezed
    1 small red onion - Diced

    Four slices Bread of your choice
    Six slices Cheese of your choice
    Large tomato sliced - 4 thick slices

Directions

Mix Tuna, Olives, Mayo, Pesto, Onion and lemon Juice in a bowl. Place cheese on bread, spread 1/4 of tuna mixture on cheese, place large tomato on top, with 1/2 slice of cheese on top. (You can top with another whole slice of cheese if wanted or use a second slice of bread for a pick-up sandwich, but this will change the listed nutritional values). Brown bottom of bread with cooking spray or small amount of olive oil in a pan. Put in 350 oven until cheese is melted. Eat w/salad, carrot sticks or side of your choice.
