Ingredients

    2 Large Potatoes (5 Cups diced)
    1 Medium Green Pepper (1 1/4 Cups Chopped)
    1/2 Large Onion (1 Cup Diced)
    2 1/2 Tbsp Olive Oil
    1/4 Tsp Pepper
    1/4 Tsp Salt
    1/2 Tsp Rosemary
    1/2 Tsp Oregano
    1/2 Tsp Garlic Powder

Directions

~In large skillet combine all ingredients and cover.
~On low/med heat cook for 30-45 minutes (depending on preference of vegetable tenderness) stirring every 10 minutes.
~Serve with eggs! Yum!
~Makes 5, 3/4-1 cup servings (cooked).
