Doesn't cost much, especially when they're fresh and in season at the market, but it sure tastes like it. Insanely rich and flavorful for very little caloric impact. Ingredients

1/4 cup diced pancetta
1 large onion diced
2 cloves garlic
1 pound fresh green beans/ strung and cut into serving pieces
4 ears of corn cut off the cob
1 medium tomato, roughly chopped
1 cup chicken stock
1/4th cup Nonfat greek yogurt
Directions
Heat a large skillet or saucier over medium high heat.
Render pancetta in a couple tablespoons of water. When crispy, remove with a slotted spoon to paper towel lined plate and set aside.
Remove all but one tsp of the fat from the pancetta.
Saute onion in the pancetta fat. When translucent, add garlic for 1 minute. When garlic is fragrant, add beans, corn, and tomato. Saute for 5 minutes until beans turn dark green.
Add chicken stock and simmer for 10 minutes.
Finish with greek yougurt. Taste and adjust seasonings.
Serving Size: Makes 6 1-cup servings
