Ingredients

1 1/2 cups bread flour
1 1/2 cups whole wheat flour
1/8 teaspoon ground ginger
2 teaspoons salt
2 teaspoons instant yeast, or equivalent
2 teaspoons olive oil
1 teaspoon diastatic malt powder (optional)
1 Tablespoon vital wheat gluten (optional)
Directions
Shape dough into one long loaf, about 14" long and 4" wide. Place on parchment paper. When risen, slash center of dough.
Heat oven well to 500 degrees.
Mist the oven with water from a spray bottle, or pour a small amount of water into a very hot pan placed on a rack set beneath your bread. This is to create steam which makes the crust wonderful! Do this every two minutes for the first six minutes of baking. Reduce temperature to 450 degrees and bake for about 20 minutes more or until internal temperature reaches 200 degrees. Tent with foil if needed to prevent overbrowning.
