Ingredients

3 cups boneless skinless chicken breast, cubed
1 cup yellow onion, chopped
1 cup carrot, sliced
1 cup celery, sliced
3 cups cooked wild rice
5 cups Great Value (Walmart) fat free less sodium chicken broth
1 cup fat free half & half
3 tbsp flour
1 tbsp extra virgin olive oil
1/4 tsp salt
1/4 tsp pepper
1/2 tsp thyme
Directions
In a large stock pot, sauté chicken until cooked through. Remove to a bowl and add wild rice. Combine half & half with flour and mix into chicken and rice. Set aside.
In the same pot, add olive oil and onion. Cook until onion is soft and translucent. Add carrots, celery, salt, pepper, and thyme. Cook, stirring, for about 5 minutes.
Add chicken broth. Bring to a boil, reduce heat, cover and simmer for about 15 minutes or until carrots and celery are softened to your liking.
Stir in the wild rice and chicken mixture. Cook, stirring, for about 5 minutes, until heated through.
Serving Size: Makes 12 1-cup servings
