Ingredients

    1 lb. Whole Wheat Spaghetti, cooked (pasta),
    2 tbsp Olive Oil
    Onions, raw, 1 medium (2-1/2" dia) chopped
    3 cloves Garlic
    2 cup Chicken Broth - 99% Fat Free,
    2 cup Pumpkin, canned, without salt
    Half cup Milk, canned, evaporated, nonfat
    1 tsp. Hot Pepper Sauce
    Cinnamon, a pinch or two
    Nutmeg, a pinch
    salt and pepper to taste

Directions

Cook Pasta according to package directions.

Saute onion and garlic in olive oil until translucent. Stir in chicken broth, pumpkin and evaporated milk. Then add hot sauce and seasonings. Adjust seasonings to taste. Simmer on low until thickened, approx. 5 minutes.

Serve with Grated Italian cheese (not included in nutritional information) and some extra hot sauce on the side.

    Very Good
    I modified the recipe to use Vidalia onions and put everything but the pasta and milk into the Crockpot on low. In the last 30 minutes, I added the milk, and while this was finishing, I boiled the pasta on the stove. It was DELICIOUS! - 6/2/09
