Introduction

Ripe tomatoes, fresh corn, warm black beans and millet. This salad is packed with protein and not a lot of fat! And it's sooo good! Ripe tomatoes, fresh corn, warm black beans and millet. This salad is packed with protein and not a lot of fat! And it's sooo good!

Ingredients

    3 Cups Black Beans
    3 Cups Fresh cooked corn
    4 Cups chopped red, ripe tomatoes
    1/2 Cup chopped cilantro
    3 Cups cooked warm Millet (or brown rice)

    Vinaigrette:
    Lime Juice
    Apple Cider Vinegar
    Honey
    Olive Oil

Directions

Cook the millet per directions. Warm the beans or cook fresh. Cook the corn and cut off the cob. Chop tomatoes. Chop cilantro. Mix the vinaigrette. Mix it all together while the millet is still warm. So good warm. Also good the next day cold.
