Ingredients

    3/4 cup brown rice
    1/4 cup wild rice
    2 cups chicken broth
    1 medium chopped onion
    1 lb ground pork sausage
    1 cup finely diced celery
    1 medium onion (about 1/2 cup)

Directions

Combine brown rice, wild rice, and chicken broth into a large sauce pan. Bring to a boil, stirring once. Cover and cook on low heat for 50 minutes (or according to instructions on rice). Chop onion and celery and set aside. Spray a fry pan with Pam, and brown sausage,, draining any excess fat (can also be rinsed). Add celery and onion to the skillet with the meat, and saute until vegetables are transparent. Add the meat mixture on top of the rice, and allow to steam until the rice is finished. When the rice is done, turn off the heat and allow it to sit for 10 minutes. Then stir to combine and serve.

To make in the oven: Bring rice and water to boil, add cooked sausage and vegetable, and gently stir. Pour all into a baking dish. Bake for 1 1/2 hours at 350 degrees, or until the brown rice is done.
