Ingredients
-
2 tbsp of olive oil
1 tsp of salt
6 oz couscous
1 cup chopped green peppers
1 cup sliced zucchini
0.5 cup of raw onion
2 large carrot
8 cherry tomatoes
Directions
Firstly you cook couscous as it says on the package.
Cut your vegetable on small and nice eatable pieces. Cherry tomatoes can be sliced in half, if too big.
Put olive oil in wok (or bigger pan), then put in hot oil all vegetables and cook all vegetable for 7 minutes. Add salt (you can add more salt if you want) Then add the cooked couscous and mix, so the couscous can absorbe all the water from vegetable.
In you like you can put some roasted almonds or peanuts in the dish too (not calculated in nutritional info).
This dish can be used as main course (just make more of it) or as side dish - it goes well with poultry.
