Ingredients

    1 1/2 cups Original Bisquick® mix (I used the Heart Smart mix)
    1/2 cup sugar
    1 teaspoon apple pie spice (1/2 tsp cinnamon, 1/4 tsp nutmeg, 1/8 tsp allspice, 1/8 tsp cardamom)
    1/2 cup apple cider or juice
    2 tbsp natural applesauce
    1-2 teaspoon vanilla
    1 egg (I used liquid egg substitute)
    1 1/4 cups chopped peeled apple (about 1 medium)

    (The original recipe called for 2 tablespoons butter or shortening, softened instead of applesauce)

Tips

This is great for dessert, breakfast and snacks.


Directions

1. Heat oven to 375°F. Place paper baking cup in each of 12 regular-size muffin cups.
2. In large bowl, beat all cupcake ingredients except apple with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 4 minutes, scraping bowl occasionally. Fold in apple. Fill muffin cups about three-fourths full.
3. Bake 17 to 22 minutes or until toothpick inserted in center comes out clean. Immediately remove cupcakes from pan to cooling rack; cool completely.
4. If desired you can frost the tops of the cupcake.


Serving Size: Makes 12 cupcakes
