Talking about too good to be true?! This salad contains plenty of fiber. Healthy oils from the avocados. A nice dose of Vitamin C from the kiwis and lime. Ingredients

2 Large Haas Avocado, diced
2 Granny Smith Apples, sliced thin, dime-sized slices
1 Large Lime and zest
4 Kiwis, sliced into thin rounds
1/2 c Pistachios
4 Fresh Mint sprigs
2 T Grade B Maple Syrup
Garnish: Mint for garnish
Directions
1. Chop, squeeze and peel all ingredients.
2. Add to a large bowl.
3. Toss well with spoon.
4. Serve immediately or cover and chill until ready to use.
Avocados will loose their firmness and color overnight.
Garnish with fresh mint leaves.
