    1/2 Turkey Polska Kielbasa--cut length wise and cut into 1/3 chunks

    1/2 lb Green Lentils
    1 Large red onion- diced
    3 carrots--diced
    3 stalks celery with leaves--diced
    2 cloves garlic--pressed
    1/2 t cumin
    1t Fresh Thyme
    Chicken Stock--1 qt
    Water- 2c
    Olive oil


In a bowl, pour boiling water over lentils and let sit for 15 minutes. Drain and set aside

Saute onion, carrots, celery, garlic in EVOO. Once veggies are soft, add thyme and cumin and cook for a couple more minutes. Then, add liquids and lentils. Cover and bring to a boil. Once soup is boiling, uncover, reduce heat and simmer uncovered for 1 hour. Add kielbasa and 2T red wine vinegar and cook until sausage is warmed through.
