Ingredients

1 whole Sweet Potato (large)
2 teaspoons Olive Oil
1 teaspoon Garlic, Minced
1 whole Egg White
1 Tablespoon Fresh Rosemary, Minced
½ teaspoons Kosher Salt
1 dash Black Pepper, Freshly Cracked
Directions
Preheat oven to 425 degrees F.
Peel sweet potato and rinse. Slice into fry size slices or wedges. Be careful not to go to thin or thick as you do not want burnt fries, nor hard fries.
In bowl combine, olive oil, garlic, egg white, rosemary, pepper and salt. Mix until it forms a paste. Toss sweet potato slices in the paste until evenly coated.
Line a cookie sheet with parchment paper as these sweet things tend to stick a bit. Lay fries out in a single layer.
Bake for 10-12 minutes, turn fries over and bake an additional 10-12 minutes. Keep an eye on them as they do burn easily.
Serves 1-2 people.
