Introduction

I am trying this for the first time tonight, so I can't tell you how great it is yet. A friend of mine made it and loved it!
I am trying this for the first time tonight, so I can't tell you how great it is yet. A friend of mine made it and loved it!

Number of Servings: 4

Ingredients

    2 large boneless, skinless chicken breasts
    3/4 cup chopped fresh mozzarella cheese
    3/4 cup chopped tomato
    1/2 cup chopped fresh basil
    1/2 medium sweet onion chopped
    1/2 cup low fat cream cheese
    1 TBS salt
    1 TBS ground pepper
    2 TBS minced garlic
    1 TBS lemon juice
    1 TBS olive oil
    2 TBS basalmic vinegar

    1/4 cup shredded mozzarella
    1/2 cup bread crumbs (I used plain)

Directions

Preheat oven to 350 degrees.

Mix all ingredients together except 1/4 cup of shredded mozzarella cheese and bread crumbs.

Spread mixed ingredients in 8x8 pan, sprinkle shredded mozzarella on top, and then sprinkle bread crumbs on top of that.

Bake for 30 minutes, dish up and enjoy!

    Very Good
    Made this for my family last night. It was very good! HOWEVER I noticed while preparing the dish that the measurements for salt and pepper seemed VERY large. I did not measure exactly but I know I used less than a teaspoon of each. - 1/8/13
