Ingredients

    4 cups shredded zuchini ( 2 medium )
    2 cups shredded carrot
    1/2 cup green pepper ( chopped )
    1 tbsp. jalapen`o pepper
    15-oz can pinto beans
    15-oz can peeled tomatoes, drained
    1/2 tsp.ground cumin
    1/2 tsp. chili powder
    1/4 tsp. garlic powder
    6-oz can tomato paste
    10 flour or wheat tortillas
    shredded mozzarella or cheddar cheese

Directions

Shred zucchini and carrots: dice peppers
Puree beans and tomatos.
combine all ingredients: except cheese.
You can microwave o for about 15 min. on high covered, stir, the another 15 min. or you can put in a large pan or skillet and cook on stove top.
cook until you reach your desired amount of doneness.
Spread 1/2 cup into center of tortilla.
add 1/2 oz cheese, fold and place in microwave baking dish.
microwave until cheese melts.
Serve with salsa or nofat yogurt, lettuce and diced tomatos.
To vary: Add shredded , cooked chicken breast or lean cooked beef, tofu.
