Number of Servings: 8

Ingredients

    1 Tbs crushed, minced garlic
    2 Tbs Olive Oil
    1 Chopped large onion
4 cups chopped Carrots (I normally use about a cup, but Hubby chopped the veggies this time)
    2 cups chopped bell pepper
2 lb Beef round other stew meat, cut into 1/2 inch cubes
4 Tbs Hungarian sweet Paprika (use more hot if you like spicy)
    1 Tbs Hungarian Hot Paprika
    1/2 cup tomato paste
    3 cups water
    salt and pepper to taste
    Couple of Bay leafs
Garnish with sour cream (optional and not included in the calories)

Directions

Saute the onions, garlic peppers and olive oil on medium high heat until onion are translucent, add the meat and brown on all sides. Next coat the the meat in the paprika, stir in so the meat is coated on all sides. Add the can of tomato and water. Cover, and cook on medium until it starts bubbling, then turn the heat down to low. Simmer until the meat is soft (almost 2 hours). Add the carrots the last 15 mins to keep the nutrients and flavor.

Serve with pasta or Spaeztle and a dollop of sour cream on top. (not calculated in the calories)
