*Tyson boneless, skinless chicken breast, 80 oz - 5 lb package- fresh boneless skinless, not frozen
*Duke's Light Mayo, 8 tbsp (remove)
*Zerto Parmesan Chese -- shredded, 4 tbsp (remove)
Bread crumbs, dry, grated, seasoned, .25 cup (remove)
*Ham, Virginia-Thin Slices Hormel from Deli, 6 oz -half slice for each piece of chicken
Mozzarella Cheese, part skim milk, 147 grams 1/8 cup for each chicken roll
Directions
Serving Size: makes 14 servings
I got a 5 lb pack of fresh boneless skinless chicken breast, not frozen.. I trimmed the fat and halved them horizontally (2 thinner pieces instead of one real thick one) Place between plastic wrap and pound it flat, be careful not to tear it all the way through. Then place a piece of ham I like Virginia brand on raw chicken, top ham with mozzarella, or swiss, roll chicken up tight with ham and cheese inside.
Now for the mayo part, I mixed 1/2 cup light Dukes mayo and 1/4 cup fresh grated Parmesan cheese and spread on top of chicken rolls. Next sprinkle them with about 4 TBS of bread crumbs. Bake at 400 for 35 minutes.
