Introduction

A vegetarian, and much healthier, version of my sister-in-laws famous Taco Soup. A vegetarian, and much healthier, version of my sister-in-laws famous Taco Soup.

Ingredients

    Brown Rice, 2 cups cooked
    Onions, raw, 1 cup, chopped
    Del Monte Stewed Tomatoes, No Salt Added, 2 cup
    Yellow Sweet Corn, Frozen, 2 cup
    Beans, red kidney, 2 cup
    Chili powder, 1 tbsp
    Cumin,ground .5 tbsp
    Pepper, red or cayenne, .125 tsp

Directions

Combine all ingredients and simmer until onions are translucent and soft.

Serving Size: Makes 9 - 1 cup servings
