Introduction

I made this with leftovers and what I had in my pantry. It turned out delicious! However, it is very hot! I cut the 9x13 amount in the pan into 6 servings. I think they were around 1 1/2 cups each or so. I made this with leftovers and what I had in my pantry. It turned out delicious! However, it is very hot! I cut the 9x13 amount in the pan into 6 servings. I think they were around 1 1/2 cups each or so.

Ingredients

    Leftover spaghetti (about 5 cups or so)
    1 1/2 c diced eggplant (I had leftover)
    1 c diced onion
    2 10 oz cans of rotel, tomato and green chilies
    3 tbsp reduced fat parmesan cheese
    1 tsp salt
    1/2 tsp pepper
    1 tsp oregano

Directions

Cook spaghetti if not using leftover. Place spaghetti in bottom of a 9x13 pan lightly sprayed with Pam. Cook turkey and onions until done, drain and place on top of spaghetti in pan. Pour both cans of Rotel in pan evenly. Spread diced eggplant in pan evenly. Sprinkle the spices evenly over the top. Sprinkle the cheese over that. Bake at 425 for 15-20 minutes until spaghetti starts to brown around edges.

Serving Size: Makes 6 servings around 1 1/2 cups or so
