Introduction

Ingredients

    Egg, fresh, 9 large, beaten
    Milk, skim, .75 cup
    Butter, salted, 3 tbsp
    1 pkg frozen chopped spinach, thawed and moisture pressed out
    Yellow Mustard, 1.5 tsp (or mustard of your choice)
    Salt, .75 tsp
    Pepper, black, .375 tsp
    2% Cheddar Cheese, 1.5 cup, shredded

Directions

Mix all ingredients together. Pour into greased baking dish (9X13 or 8X11 recommended). Bake at 350 degrees until center is fluffy and firm and sides are just brown and pull away.

    What an excellent idea - I love Egg Florentine but often don't bother because my version takes forever to put together. This is easy and tastes just as good so it will definitely become one of my regulars. - 9/22/09
