Ingredients


    1 Onion (s) in small cubes
    2 clove / n Garlic, crushed with salt
    2 Carrot (s), grated coarsely
    2 bar / s Celery, diced small
    3 tablespoons Olive oil
    2 tablespoons Tomato paste
    1 box / s Tomato (s), diced, 400 g
    450 ml Vegetable stock
    120 g Lentils, red
    4 tablespoons Herbs to taste
    2 tablespoons Parsley
    ½ tsp Fennel seeds, crushed in a mortar
    Salt and pepper
    500 g Noodles, wide or regular spaghetti
    Chili powder

Directions

Sauté in a large frying pan the onion, garlic, carrot and celery over medium heat. Add the tomato paste and fry. Add the tomatoes, the broth, the lentils and herbs, add except the parsley, cover with a lid and about 20 - let it simmer gently 25 minutes. Possibly adding more liquid. The Bolognese should have the consistency of regular ground beef sauce.

In the meantime, cook the spaghetti according to package specification.

Strain pasta after the end of cooking time and add to the Bolognese. Serve on warmed plates. Garnish with the parsley and fresh Parmesan cheese may also rub.
