Introduction

Loosely based on Veganomicon's generic cornbread recipe. Loosely based on Veganomicon's generic cornbread recipe.
Number of Servings: 8

Ingredients

    2 c. cornmeal (fine grind)
    1 c. wheat flour
    2 tsp. baking powder
    1/2 tsp. salt
    1 c. milk or milk substitute
    1 c. water
    2 tsp. cider vinegar
    1 egg
    2 T. oil

Directions

Preheat oven to 350F. Place greased cast iron skillet in oven as it preheats (use at least an 8-inch skillet with 1-inch tall sides to fit all batter).

Mix dry ingredients.

Mix wet ingredients.

Mix dry and wet ingredients just till combined (lumps are OK).

Pour into preheated skillet and pop into preheated oven. Cook for about 30 minutes, till done.
