Ingredients

    2 Chicken Breasts (abt 1 lb.), cooked and chopped (skinless and boneless)
    3 cups quinoa, cooked
    1/2 cup cucumber, skin on, diced
    1/4 cup red bell pepper, diced
    2 Tbsp flat leaf parsley, chopped
    2 tsp fresh mint, chopped
    2 Tbsp Extra Virgin Olive Oil
    1 Tbsp lemon juice, fresh
    2 Tbsp red onion, minced
    1 1/2 tsp Sherry Vinegar
    1/2 tsp Sea Salt
    1/8 tsp black pepper, freshly ground

    Combine all ingredients in a medium to large bowl.

    Vinaigrette Dressing
    2 Tbs lemon juice, fresh
    1 1/2 Tbs water
    1 Tbsp Olive Oil, extra virgin
    2 1/2 Tbsp flat leaf parsley, chopped
    Sea Salt
    Black pepper, freshly ground

    Whisk all ingredients together and combine with salad.
