Introduction

Just a quick side that I like to sauté when I can't think of anything else. Hearty, lots of fiber, and so yummy! Just a quick side that I like to sauté when I can't think of anything else. Hearty, lots of fiber, and so yummy!

Ingredients

    1 cup green peppers, diced
    1 cup chopped onions
    1 cup fresh mushrooms, sliced
    3 cups raw potato, red skin preferable
    1 tbsp extra virgin olive oil
    1 pat whipped butter

Directions

Mix all ingredients in large sauté pan. Cook over medium-high heat until onions are translucent and potatoes have softened a bit. Also pretty good with shredded Pecorino cheese sprinkled on top!

Serving Size: Makes 4 1-cup servings.
