Number of Servings: 18

Ingredients

    2 eggs
    1/2 C Greek or plain yogurt
    1/4 C Vegetable Oil
    3/4 C Brown sugar ( not packed )
    1tsp Vanilla
    3-4 sm- med very ripe bananas
    2 C Whole Wheat Flour ( I sometimes will do 1 1/2 Cups whole wheat flour and do 1/2 Cup of toasted oat bran or flax seed meal )
    1tsp baking soda
    1 Tbsp Cinnamon
    1.5 Cups frozen mixed berries/ strawberries or blueberries. (I use whatever I have on hand )

Directions

Heat oven to 375 degrees. Blend wet ingredients, fold in dry ingredients until just mixed, fill muffin cups, Bake for 20 minutes until just done.

Serving Size: makes 16-18 muffins
