Introduction

Basic Dutch baby made gluten free. This is a very basic DB recipe, and can be modified in countless ways to suit your tastes - add a little sugar and vanilla flavoring, to make it sweet; fill it with sauteed mushrooms and ham to make it savory, etc. Basic Dutch baby made gluten free. Ingredients

    Gluten-free flour mix (.5 cup your choice, or combo of sorghum flour, potato starch, tapioca flour)
    Eggs
    Butter
    Milk

Directions

Melt butter in a cast-iron pan at 400 degrees. While butter is melting, beat eggs until frothy. Add flour mix (mix should come to .5 cup combined) and milk. May add a pinch of salt.

When butter is melted and the pan is hot, pour Dutch baby batter into pan. Bake, without opening the oven door, for 20 minutes at 400 degrees.

Dutch baby will be puffy when you take it out of the oven, but will quickly fall. Sprinkle with powdered sugar, and eat with fruit or jelly or a squeeze of lemon juice.

Serving Size: Makes 6 servings.
