Introduction

Ingredients

whole chicken
4 cups flour
2 eggs
2 large carrots, chopped
3 stalks of celery, chopped
1/2 large onion chopped
4 medium potatoes
about 3 Tbsp better than bullion or 2-3 quarts of chicken broth
Directions
If Using a whole chicken cook in broth or bullion until it is ready to fall off the bone and remove from pot to cool. (about an hour) As the chicken cools add the chopped carrots, celery, and onion to pot and cook about 15 minutes.
Skim off fat from top of broth.
Add potatoes and mix dumpling dough.
Dumplings-
In a big bowl measure 4 cups of flour, add 2 slightly beaten eggs and about 1 cup of water and mix. The dough should be fairly stiff, dry and not stick to the sides of the bowl. If it is still sticky add more flour.
Add teaspoons of the dough to the boiling water and cook about 15 minutes or until they rise to the top. Meanwhile de-bone the chicken and add to the soup in bite size pieces.
I Usually also season the soup with parsley, garlic powder, pepper, and poultry seasoning....
Serving Size: This makes a large pot of soup, about 14 nice filling bowls
