Ingredients

    6 tbsp extra virgin olive oil
    2 medium onions diced
    1 red bell pepper diced
    1 green bell pepper diced
    4 cloves of garlic minced
    4 tbsp tomato puree
    2 tsp lemon juice
    2 pinches of rosemary
    2 coriander leaves

Directions

boil 2 cups of vegetable broth then take off stove top and add couscous let it stand for 5 minutes covered.

In another pan saute diced peppers, garlic, onions, with olive oil, lemon juice, tomato puree and add 2 pinches of rosemary, and 2 coriander leaves, salt and pepper to taste.

then combine the mixture with the couscous and enjoy!


Serving Size: makes 10 1 cup servings
