Ingredients

Dressing;
1/4 c sugar
3/4 t cornstarch
1/2 t ground mustard
1/8 c white vinegar
1/8 c water
1 sm egg + 1 egg yolk
1/4 c mayo w/olive oil
1 1/2 T butter
Salad
2 c broccoli florets, stemmed
1 c fresh sliced mushrooms
3 1/8" slices red onion
1/2 c mandarin oranges, drained
3 slices crisp cooked beef bacon or meatless, crumbled
1/4 c slivered almonds
1/4 c raisins
Directions
Salad
Mix all ingredients together and tos to mix well.
Dressing
In large skillet/pan combine sugar, cornstarch and mustard. Combine vinegar and water and stir into skillet until smooth adding more water if needed. Cook until thickened like custard/pudding. Remove from heat to cool slightly. Mix egg and egg yolk and stir in 2 T hot custard dressing to temper eggs, add egg mixture back into pan and stir constantly for about 3 minutes. Remove from heat and add mayo and butter. Let cool slightly. Pour over salad and toss well. May be eaten right away or chilled in refrigerator before serving.
