Ingredients

    1 Cup water
    1/2 C soy sauce
    1/2 C mirin
    2 T sugar
    3 T canola
    1 lb lean beef sirloin cut into strips
    1 large yellow onion sliced into moon shapes
    3 carrots peeled, sliced thin on the diagonal
    8 muchrooms cut in half
    1 pkg shiritaki noodles
    1 14 oz pkg firm tofu cut into 1 inch cubes
    6 scallions sliced into 1 inch pieces

Directions

put water, soy, mirin and sugar in a small saucepan, cook and stir till sugar dissolves
make sure veggies are prepared and ready to add to pot.
Put canola in large heavy bottomed pot at med/high heat-add beef saute 2 min, turn move to side of pan.
add onions and carrots-3 min-add mushrooms.
stir veggies add the sauce and bring to a boil.
Drain shirataki, cut if desired, add noodles, tofu, and scallions to pot.
Cook until meat is no longer pink and veggies are hot ~ 10 min.
Serve w/steamed rice.
