Ingredients

    1 lb. extra lean ground turkey
    1 egg, yolk removed
    1 carrot, shredded or finely chopped
    1/2 cup cooked lentils
    1/2 cup grated parmesan cheese
    1/2 cup onion, chopped
    4 garlic cloves
    1 tsp. black pepper

Directions

The lentils in this recipe add fiber and consistency, without gluten. Cook lentils in a rice cooker or covered saucepan, 3 parts water to 1 part lentils. While lentils cook, heat the broiler to 550 degrees, and use a food processor to shred or finely chop your carrot, onion, and garlic. Put these into a large bowl, along with the parmesan cheese, egg white, and black pepper. When the lentils are done, add them and the turkey into the bowl and mix together thoroughly. Spoon the mixture onto a broiler pan in ball shapes, and place in the oven. After five minutes, or when tops are brown, turn them over to brown the other side. Add to your spaghetti sauce, or use as an appetizer.

Makes about 24 2 inch meatballs, 4 to a serving.
